In your situation, no Exchange server is involved. Correct? This is
strictly Gmail sending and Gmail receiving using Outlook for Windows?

And did you also check the contact record in your Address Book? The below
information is taken from this article on About.com¹s website:

"Disable Winmail.dat Stubbornly Going to Recipients No Matter the Default²

1. Open the recipient¹s contact record in our Outlook address book.

2. Double-click or Right-click the E-mail address in the E-mail field and
select Outlook PropertiesŠ

3. From the Internet Format field drop-down menu, select "Let Outlook
decide the best sending format².

Not true at all! The reason most people send HTML mail messages is because
it¹s the default setting.

Plain text is ideal for most situations because it sends a smaller message
and allows the recipient to view the message in his font and font size
rather than you imposing your view on the recipient. Plain text is
especially needed for users who may have vision problems and need to
adjust the view of your message for easier reading.

I¹m afraid you¹re not going to find any easy solution for your old
messages other than to manually convert them.

As has been mentioned, this issue is proprietary to Outlook for Windows
and its non-Outlook recipients. This problem is not caused by Macs nor is
it caused by any mail clients on the Macs. You¹re experiencing the
disadvantage of having worked in and relied on a Microsoft Windows
environment with Microsoft Windows applications. Effectively, all your
eggs were in one big Microsoft basket.

And Microsoft has a history of using proprietary methods that are not
interchangeable with anything else. Only recently have they begun
publishing documentation about their proprietary protocols, mainly due to
the European lawsuit that now requires them to do so.

Conversion away from that environment is not easy and often not
interchangeable with anything else. A good deal of Macintosh software,
including Microsoft Entourage, has been written to open standards so that
content is interchangeable. I would dare say this is a philosophy of the
Mac platform since Mac OS X arrived. You¹re making a good decision to try
the Mac and over time you will probably find you actually have a wider
range of choices for applications and services because your data won¹t be
locked into just one format.

Hope this helps!
