The idea is that you create Device classes as an organizer and then you associate a performance template with that Device Class. For example, you would create a Device Class named:
 /Network/Firewall/Cisco/PIX

And then you'd create a Device performance template and associate it with the /Network/FirewallCisco/PIX. In the performance template you define exactly what OIDs you are interested in collecting, as well as thresholds and graphs.

Then you add devices and place them in the /Network/Firewall/Cisco/ PIX Device class and your done.

If you decide at a later point that there is another OID you are interested in monitoring you add it to the performance template associated with /Network/Firewall/Cisco/PIX and all the devices in that class automatically pick it up.

It is common for users add device classes to group hardware by manufacturer, os, etc. The ones that come pre-built are not meant to be exhaustive, they're just some of the most common groupings to get you started.
