Here is an example for you:

Define your graph with the 3 data sources you want selected.
For this example I'll use mem_memAvailReal, mem_memAvailSwap,mem_memBuffer in 
the Device template.

Add these two lines to the Custom field in the graph:

CDEF:avg=mem_memAvailReal,mem_memAvailSwap,mem_memBuffer,3,AVG
AREA:avg#00cc00:average

The CDEF line is a RPN expression that calculates the average you are after 
(http://oss.oetiker.ch/rrdtool/doc/rrdgraph_rpn.en.html).
That is then graphed by the AREA line.
The AREA line is just an example - you can change it to suit how you want your 
graph to appear (http://oss.oetiker.ch/rrdtool/doc/rrdgraph_graph.en.html), but 
you must have something equivalent  or no graph is generated - the CDEF line 
alone is not sufficient.
