What you have already done expanded the size of the virtual "disk" only, not 
the partition within that disk.

What I had to do was boot the VM off an ISO image for gparted (for partition 
resizing) which expanded my partition to include that space. I then had to 
reinstall grub, which was a bit of a pain in the ass.
