Copy that template to the parts of the /Devices heirarchy where you want to use it, and then rename it to ethernetCsmacd. Zenoss chooses the template based on the name of the interface type from the IANAifType snmp mib (as far as I can tell).
(It also uses ethernetCsmacd for any propVirtual interfaces, these days.)

Hello,
working with some Cisco routers I'd like to set ethernetCsmacd_64 as default
interface type. Anytime I add a Cisco device its available gigabit devices get
ethernetCsmacd as interface type assigned. I tried to bind/copy the predefined
template of ethernetCsmacd_64 to /Devices/Network/Router/Cisco and other
different things (zProperties). I'm new to Zenoss and I'd really like to know
what I have to do that my Cisco devices' interfaces get ethernetCsmacd_64 as
type assigned? Any help/suggestions appreciated.

Thanks in advance,
massimo
