I've only been a ZenOSS user for a few days but I'll try and answer your question.
You can backup your ZenOSS configuration by using $ZENHOME/bin/zenbackup. Then you can copy the zenbackup*.tgz file somewhere safe. Start up an updated VM and scp the zenbackup*.tgz back to the appliance. From there you can use $ZENHOME/bin/zenrestore to re-import the data. Run these programs with --help to get a full listing of options. You can, for instance, exclude exporting and importing the events database to save space. Hope this helps!
