Well, I couldn't fix this, and without rebooting the server I couldn't make the issue go away.
Seems this post hits the nail on the head: http://community.zenoss.com/forums/viewtopic.php?t=4806 While SNMP quite happily reported the Idle time to Zenoss, it seems it couldn't make sense of it because of it being larger than a 32-bit integer. I don't think it's entirely down to broken net-SNMP installations. Is this something that can be fixed in future releases? I certainly hope so, but for now I am monitoring server performance by putting thresholds against load average - which is probably more realistic since some of our busier servers can sit at 100% usage for a few minutes when scheduled jobs run.
