When I went from test to production I did a zenbackup / zenrestore,
and I think that was all I had to do.  Someone correct me if I'm wrong
(sitting in a hotel at the moment...) but it basically boils down to
making sure you have a mysql export, the ZEO database, and the
$ZENHOME/perf directory--and I believe zenbackup takes care of all
three.

If you're a bit paranoid and/or skeptical about the process (because I
was a little bit), I'd just make sure you have a full backup of the
server before you wipe it, or if you're installing on new iron, just
stop zenoss on the old server but have it still online in case you
have problems with the restore.
