The answer to most of your questions is Yes. That's terse, so I'll explain: In the unix world, the root user is allowed to become any user it wants, no password needed. So, once you're root, you can 'su - zenoss' and poof, you're now the zenoss user. At this point you could set a password for the zenoss user if you'd like, but it's not necessary. Having no password assigned to the user is a touch more secure than creating a password for it because then you must first become root before you're able to become the zenoss user.
