OK James, I've done a few more things;

1) I ran zenperfsnmp run -d xxx.xxx.xxx -v10 which usually fixes graphing 
problems, but this didn't work.

2) Then I remodelled the device and got the following error;
Unable to fill collection slots: [Failure instance: Traceback (failure with no 
frames): rrdtool.error: illegal attempt to update using time 1237299040 when 
last update time is 1910934781 (minimum one second step) ]

This server was producing graphs when it was in the MSSQLServer class, but the 
graphs have stopped being produced when moving to my new class (IIS & 
MSSQLServer)

The logs don't really show anything of note.
