1. Try clicking in the area of the graph you want zoomed in after 
selecting either zoom in or out.

2. Sure, you just have to log into the console on the VM (though I still 
recommend running on a RHEL derivative on a real box).

3. The perf graph is stored as an RRD file. Googleing that will find 
lots of info, and probably make your head hurt in trying to work with 
the files. But you can use a tool from the RRD site to export to XML, 
and then you could munge that with your favorite programming tool to 
whatever format you want.
