The default RRDCreate is set at Collectors->localhost->Edit->Default RRD Create Command You can tweak this to store much more data if you like, like James mentioned, the RRDTool site has docs on how to do this: http://oss.oetiker.ch/rrdtool/doc/rrdcreate.en.html
There are also tools on there for converting existing data to your new format.
