Without using heirarchical servers (e.g. volumes from a zfs pool exported via iSCSI to be part of another zfs storage pool) you can't do mirrored raidz2 but you can easily do triple mirroring. If disk space is not a concern, then it is difficult to beat the reliability of a triple mirror.
