Hm.  I had tried a variant: a three-way mirror, with one device missing most of 
the time.   The annoyance of that was that the pool complained most of the time 
that one device was missing.

It also requires some other things,  which I don't miss as constraints:
 - enough easily removable devices, and (more scarce) connection ports, for 
them to all be connected at once.  I don't know what happens if you 
progressively resilver one mirror vdev after another, you'll have a "backup" 
that's skewed over time.
 - a pool made of mirror vdevs, not any other type.
 - removable devices that are disks (not tapes or blobs in a storage service 
or...)
