Hi Hella, This is not possible from the zim interface. Default behavior of a versioning system like Git is to remember everything.
It is possible though using the git commandline interface. Did a quick internet search on the topic, and there are plenty of instructions to be found depending on what you want exectly. Have never tried this myself and looks like it is an topic for advanced git users. But you can give it a try (just make a backup before trying...).
