I may be a dunce on this one, but where is the true 
symbolism of Jesus' lifeblood being crushed out of him 
and him being bruised for our iniquities with the current 
use of water in our Sacrament?  With grape juice we'd 
have the proper symbolism, but I fail to see the proper 
symbolism represented with water.  I'm not criticizing 
our use of water but only trying to understand.


D&C 27:2 the Savior said to Joseph, "... it mattereth not 
what ye shall eat or what ye shall drink when ye partake 
of the sacrament, if it so be that ye do it with an eye 
single to my glory--remembering unto the Father my body 
which was laid down for you, and my blood which was shed 
for the remission of your sins.

That's a pretty good way to understand it, I think.
