Actually, GNU project started in '80s as a response against proprietary software and started with a free computer operating system, and after branched to provide other "free" software under the GNU licence that span from audio-video to graphics, education, science and programming languages, although "free" software existed before the '80s as well.
For a free list of available software under GNU licence for science visit http://directory.fsf.org/category/science/ and for a general history of the GNU project http://www.gnu.org/gnu/gnu-history.html GNU type software are not always well documented, there is usually no technical support, although a lot of passionate users may have help-lists and offer voluntary support, and the user interface is not necessarily well developed (lots of them have a command interface and some graphic capabilities). If you want more than that - then proprietary software it is.
