There is timestamp data in packets.  But, don't rely on the value for 
uptime.  From the p0f source:

   Uptime detection is also of an amusement value. Some newly released
   systems tend to multiply timestamp data by 10 or have other clocking
   algorithms. The current version of p0f does not support those
   differences over the entire database. I will try to fix it, until
   then, those boxes would have an artificially high uptime.
