since then (can or can't?) release the email due to its size, you might
assemble the email to a tmp file on the server, use mime tools to parse it.

other option would be to use amavis.custom hooks. again, use mime tools
to disassemble the email, and replace the file with a html link.

All very bad idea. in some cases, you WILL end up with an email that
will never be readable, since not all MTA's, and clients create RFC
compliant emails.
And, some email clients (like outlook) go to great pains to re-assemble
broken emails.
