Okay... the current default is 'mail, which is defined in sendmail.el
and perhaps may not be what people expect (I'm guessing this is some
sort of legacy thing, too). compose-mail is defined in simple.el so I
guess is "closer" to a basic emacs setup. If there aren't any strong
opinions on this, I'll make compose-mail the default.
