The Northeast Sheep & Goat Marketing Program now has available a poster outlining the techniques for humane (Halal) on-farm slaughter. You can view and save a PDF version of the poster at http://www.sheepgoatmarketing.info/news/HumaneSlaughter.pdf It demonstrates the correct way to sever the jugular.

Spiritofhumane.com (http://www.spiritofhumane.com/) is a site created by a small family farm operator to provide tools for humane slaughter. With the help of a SARE grant, they have developed a restraint system that lifts the sheep and suspends it (keeping it very calm). They also sell the halal knife. Neither of these items is inexpensive, but if you have a lot of sheep, it will quickly pay for itself. People WANT to buy their meat from a local farm and they WANT to know it was slaughtered humanely.
