Hi Dale, I agree with you on the spatula. I have not found a double spatula which I thought was handy to use so I just use my old trusty commercial spatula I have had for about 40 years. (LOL)
I think I will look into the Grill Glove as they (it) seems to be what I want. The Ov Glove is really nice - so long as whatever you are touching is *NOT* wet. I have a couple of sets of those long gloves and some are better than others. I threw away one set because, while they covered my forearms, they were so thin that picking up anything hot and heavy would go right through them before you could get to the top of the stove to set it down. I agree that using a towel is not a real good idea. I am always afraid that the blamed thing will get caught on something and I will drop the hot pan and probably break the glass oven door. That would be a real problem when the Boss found out I'll tell you. I prefer to keep the heat even so don't like to turn off or down the gas and that isn't really an option over charcoal. As for locating things on the grill, it isn't really all that difficult to do with a fork, a spatula or a glove. Even with a glove I generally probe first with the spatula or fork out of habit I suppose. Example: last night I had 5 really nice pork chops on the grill. Two of them were almost twice as thick as the remaining three. I suppose that's because they came from two separate packages. I store them in Ziploc freezer bags. My wife insists I cook to close to the forward edge. I do but that way I don't have to put my hands directly over the heat. She was going to turn the chops over for me as I was doing something else and put the two larger chops over the burners. When I went to check to see if they were finished, I didn't know she had moved the two chops and got a surprise when I touched the cast-iron cooking surface. I did it real quick and did not get burned. She said oh sorry! I forgot to tell you I moved the two chops. I picked up my double spatchula and flipped them over to check things out. They all were done and I took them off the grill with the double spatchula. It's just a matter of what your use to using.
