/boot/grub/splash.xpm.gz I seem to have deleted it on my box... open the file in xv/gimp check out the image size and format (most importantly indexed and number of colors and stuff) and create an image with similar size and properties and you should be able to boot with that. change the line in menu.lst what points to /boot/grub/splash.xpm.gz to point to the new file you've created.
