I can mount this partition and it seems to be fine. It is an ext3 partition

Can you boot windows with grub ?
You can also try to restore grub to mbr again. Maybe the repartitioning
has changed some values that grub need to update.

I was looking at the grub documentation. Is there a command to edit
partition attributes? I could not find one.
There's a command to create partitions but I do not recommend it to you.
You can activate partitions. Hide and unhide partition.
And I am not sure if there was a command to change the partition type or
not.
