Follow-up Comment #2, bug #51226 (project grub): For others also having this problem: I switched to the iPXE bootloader, which boots Windows and Linux correctly and without long loading times on physical devices as I faced with the old GRUB version.
In addition to that, the iPXE developers offer the handy wimboot module for directly loading .wim files without chainloading the original Windows bootloader.
