Since we're talking about full-on mail servers now, I'll toss out ModusMail by Vircom. They've been around for a long time and support is still great, spam filtering is second-to-none, and it's easy to manage and troubleshoot even though it is very flexible with tons of options. It is, however, somewhat expensive compared with other Windows-based mail servers.
