No. Closest to add an image or something with code like
<img src="http://domain/counter.cfm?id=12345";>
Then, make sure that counter.cfm logs to a database or whatever and uses 
  cfcontent to send out an actual image to the emailclient.

However, people that read the text version will not be logged, neither 
as anybody that disallows loading images, nor people that read off-line.
