As I understand it, you can have a [email protected] account and, when you 
register
to some service, give the address [email protected]

Then, in bar's home directory, have a .courier file for normal "bar" delivery 
and
a .courier-default file for the "spam collector" (mails sent to 
[email protected]
will use this .courier-default delivery instructions).
You could even "whitelist", say, Paypal with a specific .courier-paypal file.
