One of them are also employed in my company, when mails are send to him I can see in my maillog that “user unknown”.

We are using “Google Apps” as our mailserver.

I then tried in /etc/courier/esmtproutes to add : relay.server.com but I still have “User unknown” I my maillog.

How do I get Courier always to use an mail relay server ?

You already know: use emstproutes.

However, if the email address's is a domain that you configured to be a local domain, in Courier, then Courier expects every email address in that domain to have a local mailbox. Courier uses esmtproutes only for non-local mail. If a mailbox with a local domain does not exist, the mail to the unknown mailbox gets rejected.

Either reconfigure your domain set-up, or use email aliases.
