courier-unicode-devel-1.2-1.el7.centos.x86_64.rpm
courier-unicode 1.1 and 1.2 don't appear to conflict. You can install
them both.

If you're not using the default, "daemon," then you'd have to make sure
the user is created in your mock root before build.
