This is how I do it at the moment: d-i preseed/early_command string /usr/bin/killall syslogd && /sbin/syslogd -m 0 -O /var/log/syslog -S -R hostname.tld
But of course I'd also welcome a more standardized way doing it - my preseed/early_command line is starting to get overcrowded, those are only two out of 15 commands in my real preseed.cfg.
