Welcome, Kevin! Your experience with OOo should come in very useful here.

Please refer to my generic note to the list yesterday for some of my
thoughts on where the ODFAuthors group could contribute to the Apache
OpenOffice documentation efforts. We're a small group and very much
need people with ideas as well as practical suggestions on how to
achieve those ideas.
