Welcome to the challenges of mesh sniffing :) With infrastructure or single-hop peer to peer wifi you can capture all traffic by placing your sniffer next to the access point. With multi-hop mesh topologies, that is not sufficient. If you have remote login access to your mesh nodes, you could use the monitor vif to capture traffic on each node.
