You can use profiling stylesheet (tools/profile/profile.xsl) from XSL distribution to do it. Just run it with parameters "attr=lang" and "lang=xx", where xx is language you want to extract. (Many thanks to Mike Smith who brings idea making profiling stylesheet customizable this way.;) However storing multiple translations in one document is not good idea IMHO.
