As technological and transportation advances make the world seem
smaller, a growing number of food-borne illnesses, such as mad-cow
disease, are speeding along on what one scientist calls the "viral
superhighway." At one time, food-borne disease was limited to a region,
but now emerging diseases are accelerating quickly.
