I use a Hakko 808 for desoldering, and a Weller WS-80 computer-controlled unit for soldering. Each is nearly ideal (for my uses) for the particular application. I like the dial-up heat and extraordinarily fast response of the Weller soldering pencil. Less than 30 seconds from cold to 700 degrees.

For really serious soldering where a LOT of heat is needed, I have a Weller 120-watt iron - the type with a 1/2" diameter, 3" long solid copper tip. That last one only gets used once a year or so, but it's a bit like a parachute - when you need it, absolutely nothing else will do.
