You might want to check out "Fighting Spam on Mac OS X Server" which has a discussion of installing Spamassassin from CPAN < http://developer.apple.com/server/fighting_spam.html > or < http://www.stupidfool.org/docs/sa.html >.
It's more work than fink but looks like it will get you started with both CPAN and Spamassassin.
