Store in a covered container in the refrigerator. Yield: 4 to 4 ½ cups dry mix. Medium White Sauce: Blend 1/3 cup Basic White Sauce Mix with 1 cup water in a saucepan, adding the liquid slowly. Heat to boiling, stirring constantly over low heat until mixture is smooth. For a thicker sauce, stir in more mix dissolved in a little cold water. Yield: 1 cup. Variations to yield 1 cup sauce: Bechamel: Combine 1/3 cup Basic White Sauce Mix and 1 cup chicken stock. Cheese: Combine 1/3 cup Basic White Sauce Mix and 1 cup water; add 1 cup (4 ounces) shredded cheese when sauce is cooked. Curry: Combine 1/3 cup Basic White Sauce Mix, 1 cup water, and 1 teaspoon curry powder. Green Pea: Combine 1/3 cup Basic White Sauce Mix and 1 cup water; add 1/3 cup frozen, cooked green peas after sauce thickens. Horseradish: Combine 1/3 cup Basic White Sauce Mix, 1 cup beef bouillon, and ¼ cup grated fresh horseradish. Parsley: Combine 1/3 cup Basic White Sauce Mix, 1 cup water, and 1 tablespoon minced fresh parsley.
Pimiento: Combine 1/3 cup Basic White Sauce Mix, 1 cup water, and 1 tablespoon finely chopped pimiento. Mushroom Sauce: Combine 1/3 cup Basic White Sauce Mix, 1 cup water, and ½ cup canned or fresh sliced mushrooms browned in butter. Newburg Sauce: Add dash of cayenne pepper to 1 cup prepared Medium White Sauce and pour over 1 beaten egg yolk. Cook over low heat, stirring constantly until thickened. Add shrimp, lobster, or other ingredients, using about 2 cups of fish to 1 cup of sauce. Can use part white wine for water in making the sauce. A la King Supreme: Brown 1 tablespoon chopped green pepper, 1 tablespoon chopped onion, and ½ cup sliced mushrooms in butter or margarine. Add to 1 cup prepared Medium White Sauce. When the sauce is cooked, add 1 tablespoon chopped pimiento. Shrimp Sauce: To 1 cup Medium White Sauce, add ½ cup canned shrimp; ½ tablespoon finely chopped parsley may be added for additional flavor and color.
