Ultimate Burger

Grilled onions, melted Swiss and the ripest tomatoes available make this burger 
a classic!
Serves Serves 4
        * 1 1/2 pounds ground sirloin 
        * sea salt, to taste 
        * ground pepper, to taste 
        * 2 large Vidalia or WallaWalla onions 
        * 1 sprig fresh rosemary 
        * 1/4 cup extra-virgin olive oil 
        * 1/3 pound Jarlsberg or Jarlsberg lite cheese slices 
        * 2 large vine-ripened tomatoes, cut into thick slices 
        * 4 large lettuce leaves 
        * tangy barbeque sauce 
        * 4 whole grain hamburger buns 
Prepare the grill. Shape meat into 4 patties and season with salt and pepper. 
Slice the onion into thick round slices (so they don't fall through the grill). 
Take the leaves off the rosemary spring, chop and add to the olive oil. Brush 
onions with half the olive oil and season with salt and pepper. Grill the onion 
slices, carefully turning them once, until they are golden and soft. Set aside. 
Grill meat until desired doneness, about 4–6 minutes per side over a medium-hot 
fire. When they are almost done, melt cheese slices on top.
 
Brush buns or rolls with remaining oil then grill until just toasted. Place 
burgers on buns, top with onion slices and serve with lettuce, tomato slices 
and barbeque sauce.
