You'll find that you get errors as various programs try to change permissions on files in /dev. Various other things may arbitrarily fail. So, no, you can't mount / read only *without* trouble. That's not to say it's completely impossible. This is something that various people have attempted in the past with varying degrees of success. I'm sure Google will turn up all manner of interesting accounts of what they did.
