Hmm, although I'm not sure why, I do:

% whoami
dheinric
% echo $DISPLAY
:0
% su
Passwort:
# whoami
root
# echo $DISPLAY
:0

No difference with "su -". I don't have any line in root's *rc files which 
set the DISPLAY.
