Ciao David, you are right, WPS is going to be an official extension for 2.1, getting it into 2.0.x is as not as easy as with 2.1.
As per the other products, I do not know what to say since we (as in GeoSolutions) tend to use GeoServer WPS when it is needed. I guess it all boils down to what you need to do with WPS.
