Oh please, please, do not go there. While the GML cultists will insist that all things are possible, I have yet to see a production implementation of a WFS serving GML3 in any of the myriad of appliction schemas or profiles that it can possibly support. In short, GML is just getting the geo part, adding additional data would hopelessly muddy the waters. I would look to something simpler such as GeoRSS.
