(crossposting to gnome-pilot-list) gnome-pilot 2.0.17 will support bluetooth sync (it's been in the source tree nearly 12 months). With any luck I'll get this released this week. I just have a little bit of tidying up to do. Keep an eye on gnome-pilot-list for a release announcement.
