PAYING TRIBUTE TO: Marise Fernandes Marise Fernandes, having completed her early education in Belgaum (still entangled in a boundary row between the states of Maharashtra and Karnataka), graduated in Arts (Special) from the Lingaraj College in March 1956 and completed her B.Ed (English & History) the following year from the S.T College, both attached to the Karnataka University, Dharwad; thus creating a special circle of colleagues who treasured her company much after they settled down in life and at the same time making sure she despised none. On returning to Goa after getting married, Marise taught at Presentation Convent High School in Margao for over a decade winning the hearts of many a student with her flair to deliver the subject to be taught, laced with a lot of anecdotes and wit. Upon giving up teaching, she remained an admirer of her past pupils who continued to look upon her as a mentor and guide all through their young adulthood. Marise passed away in much agony on August 17, 2002 at the new family home in Benaulim after battling for two painful years with Non Hodgkin's Lymphoma (a cancer which affects the lymphatic system), having succumbed to an accidental fall, which took it's toll on her already weakened bones after heavy doses of chemotherapy and radiation. Throughout her illness, she shone as an embodiment of strength to the entire family and friends who stood by her, having placed her trust in His Divine Presence, in order to accept His Will. Marise was married to Dr. Alirio Fernandes, who retired as Deputy Director of Health Services in 1980 in the position of Medical Superintendent of Hospicio Hospital and the TB Sanatorium in Margao. (A Thanksgiving Service on the occasion of the Third Death Anniversary for the departed soul of MARISE FERNANDES will be held on Wednesday, August 17, 2005 at St John the Baptist Church, Benaulim Goa followed by the blessing of the grave at the adjoining cemetery.) But this is typical Goan mentality. We never see things in perpsective and are always influenced by our own prejudices, political and religious affiliations. It has become a habit with Gzoans (including some well educated prefessionals) to target politicians and think they have done their job. I sincerely feel that people get the government they deserve and politics is a reflection of society at large. While Mr. Parrikar has become everybody's favourite whipping boy, nobody has the time to ponder on the fact that he had to handle a bunch of incompetent ministers and selfish MLAs. Now they also choose to target his educational credentials and score brownie points in the bargain. GOA, GARBAGE ... AND THE EASY WAY OUT: Your posting on the garbage situation today has identified the main problem: over-consumption and refusal to accept individual responsibility for garbage segregation and disposal. Nandakumar Kamat and Wedell Rodrigues have stated that 30% is recyclable and 50% biodegradable. A large colony in Meces has not questioned its contractor as to what he is doing with its garbage, now that Curca is closed. He has been making middle of the night trips to the neighbouring fields! Just like the CCP! I think it is the same with almost all the colonies in Goa today. Kamat's have started vermicomposting at their sites. People, especially the two-wheelers, insist that all their shopping be packed in little plastic bags. What has happened to the humble rexene or jute shopping bags that we all lugged aroung to the Mhapsa market? ... I have heard about the activities of the eco solution company in Moira. Has it borne fruit? I do not know whether the centralized plants for each district in Goa will work. Villagers have become vary about the intentions of the government and what guarantee do they have that these expensive state of the art facilities run by the government will function and not become garbage dumps themselves? Dum Ki Murghi - Fried Chicken 1 medium sized chicken, 2 large onions, chopped fine, 1 cup plain yogurt (curds), 4 green chilies (jalapenos), a handful of mint leaves, 1 tablespoon coriander leaves, oil for frying, salt to taste. For the masala: 3 tablespoon poppy seeds, a handful o cashew nuts, 1 1/2 tablespoon gram flour, 8 almonds, 1 tablespoon ginger/garlic paste, 1 teaspoon cardamom powder, 1 1/2 teaspoon chili powder, 1/2 teaspoon turmeric powder. For garnishing: 1 1/2 tablespoon coriander leaves, chopped fine, a few mint leaves, chopped fine. Prick the chicken well. Grind the coriander leaves, green chilies and mint leaves to a fine paste. Grind the poppy seeds, almonds, cashew nuts to a fine paste. Add salt and the green chilies, coriander leaves and mint leaves paste to the curd and apply it to the chicken. Keep the chicken in the fridge for four hours to marinate. Heat oil and saute garlic/ginger paste for two minutes. Add chopped onions and fry till brown. Add the chicken and fry till light brown. Add chili powder, turmeric powder and salt. Fry well. Add a little water and cook till done. Sprinkle the cardamom powder and garnish with coriander leaves and mint leaves. Done.
