As you know, pickles and chutneys go with everything - rice, breads, fish, roast beef sandwiches, rice, grilled chicken and meats, pappadums and even tortilla chips. They add an extra dimension to meals and will satisfy the taste buds and make meals more tasty. It has to be cooled long before it is served so keep it in the fridge for a day or two before you serve it. Red Tomato Chutney 1 large onion (chopped), 2 tablespoons canola or olive oil, 2 cloves garlic (minced), 3 large ripe tomatoes (diced), 3/4 to 1 1/2 teaspoons of chili powder (depending on your tolerance for heat), 2 tablespoons tamarind extract, salt to taste, 1 tsp sugar (optional) In a skillet, cook onion in oil over medium heat until soft. Stir in garlic, and continue cooking for 3 minutes. Stir in tomatoes, and cover; continue cooking until tomatoes are soft and begin to break down. Season with chili powder, tamarind extract, and salt and sugar if needed. Ttransfer mixture to a blender or food processor. Process until smooth.
