There is nothing difficult about healthy eating. It is simply a common-sense approach to food that is easy to live with, once you get used to it. Here are some "Heart healthy" recipes that are very easy to prepare and the best part is "they taste good". Enjoy! VEGETABLE STIR-FRY - Salad 1 pound fresh broccoli or snap peas, 1 tablespoon margarine, 1 tablespoon peanut oil, 1 pound carrots, peeled and thinly sliced, 3/4 pound mushrooms, thinly sliced, 5 medium green onions, thinly sliced, 1 tablespoon fresh lemon juice, 2 tablespoons sherry, Freshly ground black pepper to taste, 1 teaspoon nutmeg, 1 teaspoon thyme. Rinse broccoli or snap peas . If broccoli, separate florets by cutting into quarters so they are of uniform size. Peel stems and cut into 2-inch lengths. Set aside. In a large skillet or wok, heat margarine and oil over medium heat. Add broccoli or snap peas, carrots, mushrooms and onions. Cook and stir 5 minutes, or until vegetables are tender-crisp. Stir in lemon juice, sherry and other seasonings. Serve immediately. Here is another delicious recipe that uses fresh and crispy vegetables. Try it, you will be hooked. 1 red pepper, 1 green pepper, 1 yellow pepper, 4 mushrooms (thinly sliced), 1 small aubergine/eggplant, 1 courgette (zucchini), handful diced paneer (similar to ricotta cheese (optional), pita bread (also called pocket bread, is a flat unleavened bread made from whole-wheat or white flour. These rounds can be cut in half and stuffed with savory fillings). For marinade: 1 teaspoon crushed garlic /ginger paste, 1 teaspoon chopped green chilies/jalapenos, 2 teaspoon tomato ketchup, 1 teaspoon chili sauce, 1 tablespoon soya sauce, 1 teaspoon olive oil, salt to taste. Mix all the ingredients fort marinade to form a marinade. Chop all vegetables into chunks and toss in the marinade. Leave aside for 30 mins. Next, place all the marinaded vegetables on a flat, slightly oiled baking tray and grill until vegetables just begin to char. (alternatively vegetables can be put on skewer and barbecued). Remove from grill. Slice a warmed pita bread and fill with the cooked vegetables. Serve hot with coriander chutney.
