RICE & MUSHROOM PILAF

2 cups mixed Texmati white, brown, wild and red rice
2 1/2 tbs butter
2 leeks, white and light green part only, thinly sliced
2 pkg 4 oz each assorted sliced wild mushrooms
2 tsp chopped thyme
1/4 tsp each salt and pepper
1/4 cup chopped parsley

Cook rice as jar directs. Melt 2 tbs butter in skillet. Add leeks, cover, cook 
5 min. or until tender. Add mushrooms and saute 5 min. or until mushrooms and 
leeks are tender. Stir in thyme, salt and pepper, cook 1 min. Add rice to 
skillet, then remaining butter and parsley. Toss to mix.
