Then use the server browser to find a server? Nobody is forcing you to use Quickplay.
You should also probably check your rates because sudden lag when lots of stuff starts happening can be caused by your sv_maxrate being set too low. There are a bunch of servers out there that like to dick with clients' rates for whatever reason and not set them back.
