In which case, you should double check xda devel forum for how to root and/or
install custom ROMs on a given model. 

For Samsung (the brand), their galaxy line is supported by heimdal. 

Heimdal is a software (IIRC, GPL'ed), which will write ROMs and other goodies 
to the phone. Manufacturers, as usual, provide only non-free s/w for such 
tasks. For example, Samsung provides a non-free s/w which runs only on 
non-free oses called ODIN. Heimdal is a replacement for ODIN - and runs on both
free and non-free OSes. 

My phone is not supported by Heimdal. 

As to defy+, there are reports of people running ICS on it. See:-
